Pickle Falafel Bento Number Two

I like the design of this kids’s monbento box a lot. Although I wish they had a size between 500mL and 700mL. I usually find that 600 mL sized boxes are a good fit for me.

  • 5 trader joes pickle falafel (100 calories)
  • an extremely overmicrowaved potato (not sure. Maybe 20 calories at most?)
  • quick pickles (negligible)
  • steamed broccoli (maybe 10 calories)
  • cherry tomato (negligible)
  • leftover sauteed asparagus (30 calories)
  • leftover tofu teriyaki (about 70 calories)
  • jasmine rice (180 calories)

Pickle Falafel Bento

Made a little 500 cal falafel bento this morning.
Trader Joes Mini Pickle Falafel: 200 calories for 10.
Quinoa Tabbouleh: About 300 calories.

The mini pickle falafel are pretty weird. I like pickles and I like falafel but I’m not sure I like them at the same time. The texture was good though even though I microwaved it. I wish they had the same falafel but not pickle flavored.

Purple Rice Chinese Food Bento

I made some food out of The Vegan Chinese Kitchen the other day and had leftovers. I really like this cookbook. It has exactly the same flavor profile as the food I ate when I was in Taiwan.

This bento would be pretty un-colorful otherwise due to the paleness of the gan tofu so I went out of my way to make purple rice. I made the rice purple by adding in some grains from a zakkokumai packet while the rice was cooking. 

This is about a 460 calorie bento.

Purple rice with Edamame: About 190 calories.

Leftover Braised Tofu Sheets with Pepper (Jian Jiao Gan Dou Fu): About 170 calories.

Stir Fried Broccoli with Sichuan Pepper: About 50 calories.

Half a folded Just Egg: About 50 calories.

I originally got the folded just eggs thinking I was going to make vegan bacon egg and cheeses. But the vegan bacons are just not up to par yet…

Glass Noodle Bento

This glass noodle bento is vegan and about 350 calories:

Glass Noodle Fry: about 300 cal
Corn/Sweet Pepper Saute: about 40 calories
Steamed Broccoli: About 10 calories
Carrot Cutouts: negligible

Glass Noodle fry is adapted from this recipe. I modified it a little by using 2 Just Eggs and Wan Ja Shan Vegetarian Mushroom Oyster Sauce instead of fish sauce.

I’m pretty happy with the colors in this. I always try to hit all 5 colors when I make a bento.

Yellow: Corn
Red: Red Sweet Pepper and Red Chili Pepper
Green: Gai Lan in the Noodle Fry, Steamed Broccoli
White: Sesame Seeds
Black: Black Pepper on the Corn/Sweet Pepper Saute.

Because the glass noodles don’t get hard in the fridge like rice does, you can assemble the bento entirely the night before.
